Zippy Mushrooms - Recipe by Mike Ryan
    
 
 
¾ cup tarragon vinegar
 
2 tablespoons water
 
1 ½ tsp salt
 
Dash fresh ground pepper
 
1 large sweet onion, diced large
 
½ cup salad oil
 
1 tablespoon sugar
 
1 lb. fresh mushrooms (small, whole)
 
Dash of Tabasco (to taste)
 
1 garlic clove, minced
  
Mix all items and store in refrigerator for 24 hours. Great as an appetizer, side dish with meat or just a snack!
*Tip: Make sure to use sweet onions like Texas Sweet or Vidalia. It’s a toss up if the mushrooms or the onions are the real treat here!
